Holly is a leading Sydney-based Clinical Nutritionist who champions a balanced, realistic approach to food. Holly runs a leading private practice specialising in weight management and behaviour change, with extensive experience in nutrition consultancy, workplace wellness, and public health. She is highly regarded for her expertise in developing sustainable, science-backed approaches to nutrition and healthy living.

Her food philosophy is simple: food should be nourishing, flavoursome, and enjoyable. As Bottega Coco’s in-house Nutritionist, The “Nutritionist-Approved Picks” on this menu have been designed by Holly and our head chef to reflect that balance, offering dishes that deliver both nourishment and satisfaction, without compromise.

TO START

Freshly Shucked Sydney Rock Oysters
Rock oysters are naturally rich in zinc, which supports immunity and skin health, as well as omega-3
fatty acids for heart and brain function. They’re also a lean source of high-quality protein, making
them a light yet nutrient-dense choice. Just 3 oysters provide over 50% of your recommended daily
zinc intake, making them a true natural multivitamin.

Olive Piccanti
A mix of olives rich in heart-healthy monounsaturated fats and antioxidants, which support heart
health and help protect cells from damage. They’re also a great source of vitamin E and essential
minerals, making them a flavorful, nutrient-packed snack or starter.

ANTIPASTI

Tartare Di Tonno
Tartare Di Tonno combines fresh Yellowfin tuna, a lean source of protein, with mango and orange,
which are rich in vitamin C to help support immunity, collagen production and overall energy. Finished
with basil oil, which contains antioxidant and anti-inflammatory benefits, this dish is a light,
nutrient-packed choice bursting with flavour.

SECONDI

Pescato Del Giorno
Pescato Del Giorno features fresh, seasonal protein-packed fish to support muscle mass and
recovery. Paired with pea purée for fiber to aid digestion, cauliflower rich in sulforaphane to support
liver detoxification and cellular health, and baby beetroot which helps boost nitric oxide for healthy
circulation, this dish is the perfect summer main.

EXPRESS LUNCH

Insalata Di Pollo / Insalata Di Gamberetto
This fresh, balanced salad can be served with either free-range chicken breast or prawns, both
excellent sources of lean protein to keep you satisfied all afternoon. Mixed Italian leaves, including
radicchio, support digestion and liver health, while cherry tomatoes provide lycopene, helping protect
the skin from sun damage. Parmesan and almond flakes deliver calcium to support bone, muscle,
and nerve health, whilst also providing healthy fats help your body absorb the fat-soluble vitamins in
the vegetables.

CONTORNI & SALADS

Pan Fried Broccolini
Our pan-fried broccolini is rich in fiber for gut health and is one of the richest sources of sulforaphane,
a compound that supports liver function, hormone health and cellular health. Topped with a spicy
crumble of roasted almonds and shaved Parmesan, this side provides vitamin E and calcium from the
almonds for bone and heart support, additional calcium and probiotics from the Parmesan to support
gut health, and protein for muscle maintenance.

Insalata Italaina
This fresh salad heroes seasonal produce and helps boost your vitamin and mineral intake for the
day. The dressing features extra virgin olive oil which provides heart-healthy monounsaturated fats.
While seasonal figs add fiber to support gut diversity, as well as potassium and antioxidants for heart
and bone health. Witlof contains bitter compounds that aid fat digestion, making it the perfect side to
accompany a richer dish.

I’m an Accredited Clinical Nutritionist, and for the past five years I’ve run a leading private nutrition clinic in Sydney, specialising in weight management and behaviour change. My passion is helping people find sustainable, enjoyable ways to eat well.

My mission is to educate and empower people to take control of their health, optimise their weight, and cultivate a healthy relationship with food.

My food philosophy is all about helping people discover and celebrate nutritious, delicious, and health-promoting foods – food that’s accessible, easy to prepare, and full of flavour. I see food not only as nourishment (the single most important predictor of our health), but also as connection, tradition, and pleasure. Eating for health means honouring all the roles food plays in our lives and appreciating the full spectrum of its value.

It may come as no surprise that I’m a massive foodie myself – I love cooking, sourcing quality produce, and exploring Sydney’s vibrant dining scene.

I’m originally from Manchester, UK, and have been living in Sydney for 11 years. Outside of clinic work, I’m involved in public health program implementation, corporate wellness initiatives, and speaking engagement.

On the personal side, I love the beach and try to get in the ocean for a swim every day. Other things I enjoy include Pilates, travel, live comedy, gigs, dogs, beauty, and reading.
